Recipe: Gluten Dairy Free Buttermilk Bread

Gluten Dairy Free Buttermilk Bread Recipe

Liquid Ingredients:

•    3 large eggs, lightly beaten
•    1/4 cup oil
•    1 1/4 coconut milk or 1 1/4 cup soy milk + 3/4 tsp lemon juice (let soy milk and lemon juice stand until slightly thickened.

Dry Ingredients:

•    2 cups brown rice flour
•    1/2 cup potato starch flour
•    1/2 cup tapioca flour
•    3 1/2 teaspoons xanthan gum
•    1/4 cup sugar
•    1 1/2 teaspoons salt
•    2 1/4 teaspoons active dry yeast
   
All ingredients should be at room temperature. Mix all liquid ingredients together and pour into breadmaker. Mix all dry ingredients, except yeast, together and spoon over top of liquid ingredients in breadmaker. Sprinkle yeast over dry ingredients, and avoid letting it touch the sides of the pan. Use the basic or light setting on a bread machine. After bread is done, remove immediately and cool down on a rack.

INGREDIENTS
•    1 egg
•    1/3 cup egg whites
•    1 tablespoon apple cider vinegar
•    1/4 cup canola oil
•    1/4 cup honey
•    1 1/2 cups warm milk alternative
•    1 teaspoon salt
•    1 tablespoon xanthan gum
•    1/2 cup tapioca flour
•    1/4 cup garbanzo bean flour
•    1/4 cup millet flour
•    1 cup white rice flour
•    1 cup brown rice flour
•    1 tablespoon active dry yeast

DIRECTIONS
1.    Mix all the dry ingredients together well in a bowl.
2.    Warm eggs to room temperature (in a glass of warm water) before cracking.
3.    Mix all wet ingredients together in a separate bowl.
4.    Place ingredients in the pan of the bread machine, liquid ingredients first. Select cycle; press Start. Five minutes into the cycle, check the consistency of the dough. Add additional rice flour or liquid if necessary.
5.    When bread is finished, remove immediately from the pan.

Gluten Dairy Free Bread does not keep well so slice the bread and store the extra’s in the freezer.
